Did you know before Play Dough Moms just gave their kids a hunk of bread dough to play with?

Plus a recipe for Chick Pea Tuna Sandwiches

I love tuna fish sandwiches. I crafted this vegetarian version using chick peas (garbonzo beans).

I cook my beans up fresh.

In a crock pot add one cup of dried beans to a pot of water. Salt and Pepper to taste. Cook on a low setting for several hours.

I used half of those beans last night to make roasted red pepper hummus.

For lunch today I used the remainder of the beans to craft a vegetarian tuna type spread.

Mash one cup of cooked chick peas with diced onion, celery, and a couple tablespoons of cooked brown basmati rice.

Add any sort of additional ingredients you like. In this mix I put in vegan mayo, sweet relish, salt and pepper, miracle whip, and topped it with microgreens.

My grandma used to make miracle whip tuna with iceberg lettuce on white bread with chopped celery and purple onions. I loved her sandwiches!

I have found if I just put in a tablespoon of the dreaded whip, I can still recreate the flavor of my childhood favorite but then mostly use vegan mayo, sour cream, or plain yogurt as the dressing for the spread.
